At Jeune et Jolie, sustainability is not a single initiative — it’s a mindset that informs every choice we make. From how we source our ingredients to how we treat our community and environment, we believe that doing things thoughtfully, both big and small, makes our restaurant — and our world — better.

Responsible Sourcing

We build meaningful relationships with local farmers, ranchers, foragers, divers, and fishermen who share our values. Our ingredients come from producers who practice organic, regenerative, and ethical agriculture and harvesting. We focus primarily on ingredients grown and raised in California and along the West Coast, aligning our menus with the rhythm of the seasons.

Seasonal Cooking & Full Utilization

Great cooking is grounded in care and creativity — and that includes using every ingredient to its fullest. Our chefs practice cross-utilization to reduce waste and enhance flavor. For example:

  • We render fats and bones from whole-animal butchery into broths, glazes, sauces, and staff meals.

  • We transform vegetable trim into house-made hot sauces and purées for the raw bar.

  • We save oyster shells to be repurposed by aquafarms.

  • Every piece of green waste is hand-delivered to local farms, like Sage Hill Ranch and Thompson Heritage Ranch, where it's composted or used to feed livestock — returning nutrients back to the soil and closing the loop.
